@mfussenegger is it possible to somehow enable backwards compability such that we still can work with versions like java 17?

To run eclipse.jdt.ls your only options are to upgrade to at least jdk 21 or if you want to stick to jdk 17 stick to an older version of eclipse.jdt.ls.

Note that only eclipse.jdt.ls requires jdk 21, you can still use it to develop projects ranging from jdk8 to 24 if you configure the runtimes and have the language level set appropriately in the maven pom.xml or the gradle config.
