Align the JWT and SDJWT credentials APIs and properties according to the VCDM 1.1 in the Swift SDK

Proposed feature

In the cloud-agent 1.40.0 the following changes were introduced:

1. The schemaId property is removed from the JWT VC and replaced with the credentialSchema object with type and id properties.
2. The schemaId property (deprecated but still can be used in the API) or credentialSchema object is required to initiate the SDJWT issuance flow.
