Show an image when sharing on social media

How do I pick an image for when I share a link to my site on social media (Bluesky etc.)? Right now no image comes up, even when my page has an image in it (for example, https://jaredjeya.github.io/publication/2025-04-18-HSF-origin-DFL-lattice-Schwinger-model). I can see there is an option in the config for "og_image" but I'm unsure how that works.

It looks like the best way to go about this will be to update _includes/seo.html to pull the relevant information and have an option for an default defined in _config.yml, but also to update things as needed based upon individual pages overriding things. Most of the framework is already in place for a site-wide defaults so it's mostly just a matter of adding things for additional pages and testing.
